Slow Cooker Cheesy Sausage & Potato Soup

Ingredients

  • 1 lb ground sausage (mild or spicy)
  • 4–5 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 ½ cups shredded cheddar cheese
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp flour (optional, for thickening)
  • 3 tbsp butter
  • ½ tsp black pepper
  • ½ tsp paprika
  • Salt, to taste
  • ½ cup chopped green onions (for garnish)
  • ½ cup cooked bacon pieces (optional)

Instructions

  1. Brown the sausage in a skillet until fully cooked. Drain excess grease.
  2. In your slow cooker, add potatoes, onion, garlic, and chicken broth. Stir in cooked sausage.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  4. About 30 minutes before serving, melt butter in a small pan, whisk in flour, then slowly add cream to make a roux. Stir into the slow cooker.
  5. Add shredded cheese and stir until melted and creamy.
  6. Season with salt, pepper, and paprika.
  7. Garnish each bowl with green onions and bacon if desired.

Tips

  • For a thicker soup, mash some of the potatoes before adding the cheese.
  • You can use Italian sausage for extra flavor.
  • Swap cheddar for Colby Jack, pepper jack, or a cheese blend.
