Slow Cooker Cheesy Sausage & Potato Soup
Ingredients
- 1 lb ground sausage (mild or spicy)
- 4–5 medium potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 ½ cups shredded cheddar cheese
- 1 cup heavy cream (or half-and-half)
- 2 tbsp flour (optional, for thickening)
- 3 tbsp butter
- ½ tsp black pepper
- ½ tsp paprika
- Salt, to taste
- ½ cup chopped green onions (for garnish)
- ½ cup cooked bacon pieces (optional)
Instructions
- Brown the sausage in a skillet until fully cooked. Drain excess grease.
- In your slow cooker, add potatoes, onion, garlic, and chicken broth. Stir in cooked sausage.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
- About 30 minutes before serving, melt butter in a small pan, whisk in flour, then slowly add cream to make a roux. Stir into the slow cooker.
- Add shredded cheese and stir until melted and creamy.
- Season with salt, pepper, and paprika.
- Garnish each bowl with green onions and bacon if desired.
Tips
- For a thicker soup, mash some of the potatoes before adding the cheese.
- You can use Italian sausage for extra flavor.
- Swap cheddar for Colby Jack, pepper jack, or a cheese blend.
