Ingredients:
1 1/2 cups creamy peanut butter
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
3 1/2 cups powdered sugar
1 1/2 cups crushed Reese’s Pieces
2 cups semi-sweet chocolate chips
2 tablespoons coconut oil or shortening
Directions:
In a large mixing bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix until smooth and well blended.
Gradually add the powdered sugar, stirring continuously until a thick dough forms.
Fold in the crushed Reese’s Pieces until evenly distributed throughout the mixture.
Scoop out small portions of the mixture and roll them into 1-inch balls. Place the balls onto a parchment-lined baking sheet.
Transfer the baking sheet to the refrigerator and chill the peanut butter balls for at least 30 minutes, or until firm.
In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil (or shortening) in 30-second intervals, stirring between each interval, until smooth.
Dip each chilled peanut butter ball into the melted chocolate, using a fork to coat evenly. Allow the excess chocolate to drip off before placing back on the parchment-lined sheet.
Once all the balls are coated, refrigerate again for 15–20 minutes, or until the chocolate is set.
