Nun’s Puffs (Fluffy, Golden Pastry Bites)
A delightful old-fashioned treat with a curious name and a heavenly texture.

Nun’s Puffs are a light and airy pastry with French roots, known for their simple ingredients and impressive puff. Despite the humble pantry staples used—just butter, milk, flour, and eggs—the result is a golden, custardy interior and a delicate, crisp exterior. Often sweetened lightly and finished with a drizzle of honey or a sprinkle of sugar, they’re perfect for brunch, tea time, or a cozy morning bake.

Ingredients
½ cup (1 stick) unsalted butter

1 cup whole milk

¾ cup all-purpose flour

4 large eggs

½–1 tablespoon granulated sugar (optional, for added sweetness)

Honey or sugar for topping

Instructions
Preheat the Oven
Set your oven to 375°F (190°C) and grease a muffin pan thoroughly.

Prepare the Dough
In a medium saucepan, melt the butter and milk together over medium heat. Once it reaches a gentle boil, remove from heat and quickly stir in the flour (and sugar if using) until the mixture pulls away from the sides and forms a ball. Let cool for 10–15 minutes.

Incorporate the Eggs
Beat in the eggs one at a time, mixing well after each addition. The batter will be thick, smooth, and slightly glossy.

Fill the Muffin Pan
Spoon the batter into the greased muffin cups, filling each about halfway.

Bake
Bake for 30 minutes, or until the puffs are golden and set. Do not open the oven door during baking, as this may deflate the puffs.

Finish and Serve
Remove from the oven and top with a drizzle of honey or a generous sprinkle of sugar while warm. Serve immediately for the best texture.
