Japanese Cheesecake

Ingredients:

  • 8 oz (225g) cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 6 large egg yolks
  • 1/3 cup (65g) granulated sugar
  • 1/2 cup (65g) all-purpose flour
  • 1½ tablespoons cornstarch
  • 1/4 cup (60ml) heavy cream
  • 1 tablespoon lemon zest

You will also need 6 egg whites and an extra 1/3 cup sugar for the meringue (added below).

Instructions:

Step 1: Prep & Preheat

  • Preheat your oven to 320°F (160°C).
  • Line the bottom and sides of an 8-inch round cake pan with parchment paper.
  • Place the pan inside a larger pan for a water bath later.

Step 2: Make the Batter

  1. In a large bowl, melt cream cheese and butter over a double boiler (or gently in the microwave). Stir until smooth.
  2. Add the egg yolks, one at a time, whisking until fully incorporated.
  3. Mix in sugar, then add the lemon zest and heavy cream. Stir until well combined.
  4. Sift in the flour and cornstarch. Mix until smooth and lump-free.

Step 3: Make the Meringue

  1. In a separate clean bowl, beat 6 egg whites on medium speed until foamy.
  2. Gradually add 1/3 cup sugar, a little at a time.
  3. Beat until stiff peaks form – the meringue should be glossy and hold its shape.

Step 4: Fold Gently

  • Gently fold the meringue into the cream cheese batter in 3 additions, using a spatula. Be careful not to deflate the batter.

Step 5: Bake in Water Bath

  1. Pour the batter into the prepared cake pan.
  2. Tap the pan lightly to release air bubbles.
  3. Place the cake pan in the larger pan and add hot water (about 1 inch deep) for the water bath.
  4. Bake for 25 minutes at 320°F (160°C), then reduce to 285°F (140°C) and bake for another 40–45 minutes, or until the top is golden and a skewer comes out clean.

Step 6: Cool & Serve

  • Let the cake cool in the pan for 10–15 minutes.
  • Remove from pan, peel off parchment, and let it cool completely.
  • Refrigerate for a few hours for best texture.

Tips:

  • Don’t skip the water bath – it gives the cake its signature moist, fluffy texture.
  • Use room-temperature ingredients for best results.
  • Dust with powdered sugar or top with berries before serving!
