Ingredients:
For the Salad:
• 4 cups broccoli florets, chopped
• 1 large Honeycrisp apple, diced
• 1/2 cup dried cranberries
• 1/2 cup chopped pecans or walnuts
• 1/4 cup red onion, finely diced
• 1/2 cup shredded sharp cheddar cheese (optional but delicious)
For the Dressing:
• 1/2 cup mayonnaise
• 2 tbsp apple cider vinegar
• 1 tbsp honey
• Salt and pepper, to taste
Instructions:
1. Make the Dressing:
In a small bowl, whisk together the mayonnaise, apple cider vinegar, and honey. Add a pinch of salt and pepper to taste. Set aside.
2. Assemble the Salad:
In a large bowl, combine chopped broccoli, diced apple, cranberries, nuts, red onion, and shredded cheese if using.
3. Toss and Chill:
Pour the dressing over the salad and toss until everything is well coated.
Let it chill in the fridge for at least 30 minutes to allow the flavors to meld.
4. Serve:
