Creamy Beef & Mushroom Rice Bake

This comforting casserole brings together ground beef, mushrooms, creamy sauce, and rice for a one-dish meal that’s both hearty and satisfying. Perfect for weeknight dinners or potlucks, it’s creamy, cheesy, and packed with flavor.


Ingredients

  • 1 lb ground beef
  • 1 cup chopped mushrooms (white button or cremini)
  • 1 small onion, diced
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

Step 1: Cook the Beef & Veggies

  • In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.
  • Add the chopped mushrooms and onion. Cook for 4–5 minutes, until softened.
  • Season with garlic powder, salt, and pepper.

Step 2: Combine Ingredients

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine the beef mixture with uncooked rice, cream of mushroom soup, beef broth, and sour cream. Stir until well blended.

Step 3: Transfer to Baking Dish

  • Pour the mixture into a greased 9×13-inch baking dish. Spread evenly.
  • Cover tightly with foil.

Step 4: Bake

  • Bake covered for 50–55 minutes, or until the rice is tender and most of the liquid is absorbed.
  • Remove foil and sprinkle with cheddar cheese, if using. Return to oven uncovered for 5–10 minutes, until cheese is melted and bubbly.

Step 5: Serve & Enjoy

  • Let rest for 5 minutes before serving.
  • Garnish with fresh parsley or green onions for a pop of color.
