Butterscotch Chewies
These soft, chewy cookies are bursting with rich butterscotch flavor and buttery goodness. Perfect with a glass of milk, a cup of tea, or straight off the baking sheet!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups butterscotch chips
Instructions
- Prepare the Dough
- In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Combine Dry Ingredients
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Add Butterscotch Flavor
- Fold in the butterscotch chips until evenly distributed.
- Chill the Dough (Optional)
- For thicker cookies, chill the dough for 30 minutes before baking.
- Bake the Cookies
- Preheat oven to 350°F (175°C).
- Drop rounded tablespoons of dough onto a lined baking sheet, spacing about 2 inches apart.
- Bake for 9–11 minutes, until edges are lightly golden but centers are still soft.
- Cool & Enjoy
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Tips & Variations
- Add ½ cup chopped pecans or walnuts for extra crunch.
- Sprinkle a little sea salt on top before baking for a salted butterscotch twist.
