Butterscotch Chewies

These soft, chewy cookies are bursting with rich butterscotch flavor and buttery goodness. Perfect with a glass of milk, a cup of tea, or straight off the baking sheet!

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ cups butterscotch chips

Instructions

  1. Prepare the Dough
    • In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
    • Beat in eggs one at a time, then add vanilla extract.
  2. Combine Dry Ingredients
    • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
    • Gradually mix the dry ingredients into the wet mixture until just combined.
  3. Add Butterscotch Flavor
    • Fold in the butterscotch chips until evenly distributed.
  4. Chill the Dough (Optional)
    • For thicker cookies, chill the dough for 30 minutes before baking.
  5. Bake the Cookies
    • Preheat oven to 350°F (175°C).
    • Drop rounded tablespoons of dough onto a lined baking sheet, spacing about 2 inches apart.
    • Bake for 9–11 minutes, until edges are lightly golden but centers are still soft.
  6. Cool & Enjoy
    • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Tips & Variations

  • Add ½ cup chopped pecans or walnuts for extra crunch.
  • Sprinkle a little sea salt on top before baking for a salted butterscotch twist.
  • Replace half the butterscotch chips with chocolate chips for a fun flavor combo.
