Tomato & Cottage Cheese Sourdough Toast

Ingredients (1 Serving)

  • 1 slice sourdough bread (preferably thick-cut)
  • 3–4 tbsp cottage cheese
  • 1 ripe tomato, sliced
  • 1 tsp extra virgin olive oil
  • 1/2 tsp balsamic vinegar (or reduction)
  • A pinch of dried oregano
  • Flaky sea salt (to taste)
  • Freshly cracked black pepper (optional)

Instructions

  1. Toast the Bread
    Toast the sourdough slice until golden and crisp, either in a toaster or on a skillet.
  2. Spread the Cottage Cheese
    While the bread is still warm, spread a generous layer of cottage cheese evenly over the toast.
  3. Add Tomatoes
    Layer the tomato slices on top of the cottage cheese.
  4. Season and Drizzle
    Drizzle olive oil and balsamic vinegar over the tomatoes. Sprinkle with oregano, flaky salt, and a bit of cracked pepper if using.
  5. Serve Immediately
    Serve as-is for a quick snack, or pair with a soft-boiled egg or avocado for a more filling meal.
