Ingredients (1 Serving)
- 1 slice sourdough bread (preferably thick-cut)
- 3–4 tbsp cottage cheese
- 1 ripe tomato, sliced
- 1 tsp extra virgin olive oil
- 1/2 tsp balsamic vinegar (or reduction)
- A pinch of dried oregano
- Flaky sea salt (to taste)
- Freshly cracked black pepper (optional)
Instructions
- Toast the Bread
Toast the sourdough slice until golden and crisp, either in a toaster or on a skillet. - Spread the Cottage Cheese
While the bread is still warm, spread a generous layer of cottage cheese evenly over the toast. - Add Tomatoes
Layer the tomato slices on top of the cottage cheese. - Season and Drizzle
Drizzle olive oil and balsamic vinegar over the tomatoes. Sprinkle with oregano, flaky salt, and a bit of cracked pepper if using. - Serve Immediately
Serve as-is for a quick snack, or pair with a soft-boiled egg or avocado for a more filling meal.
