CRISPY CHICKEN WINGS

INGREDIENTS:

(Makes about 16–20 wings)

• 2 lbs chicken wings (separated into flats and drumettes)

• 1 tablespoon baking powder (NOT baking soda – this is the crisp secret!)

• 1½ teaspoons salt

• 1 teaspoon black pepper

• 1 teaspoon garlic powder

• ½ teaspoon smoked paprika (optional, for flavor + color)

• 1 tablespoon neutral oil (like canola or vegetable)

INSTRUCTIONS:

1. Prep the wings:

If your wings are whole, use a sharp knife to cut them into flats and drumettes. Pat them dry with paper towels — the drier, the crispier.

2. Season the wings:

In a large bowl, toss the wings with baking powder, salt, pepper, garlic powder, and paprika. Add the oil and mix well until every wing is evenly coated.

3. Choose your method:

You’ve got options — and all of them deliver on crisp.

Oven:

• Preheat to 425°F (220°C).

• Place wings on a wire rack over a baking sheet lined with foil.

• Bake for 40–45 minutes, flipping halfway, until golden and crispy.

Air Fryer:

• Preheat to 400°F (200°C).

• Arrange wings in a single layer.

• Cook for 20–25 minutes, flipping halfway through.

Deep Fryer:

• Heat oil to 350°F (175°C).

• Fry wings in batches for 8–10 minutes until crispy and cooked through.

• Drain on paper towels and sprinkle with a touch of salt.

4. Optional: Toss in sauce

Want them saucy? Toss the hot wings in buffalo sauce, BBQ, honey garlic, or your favorite wing glaze. Or keep them dry and dip into ranch, blue cheese, or spicy mayo.
