Creamy Beef & Mushroom Rice Bake
This comforting casserole brings together ground beef, mushrooms, creamy sauce, and rice for a one-dish meal that’s both hearty and satisfying. Perfect for weeknight dinners or potlucks, it’s creamy, cheesy, and packed with flavor.
Ingredients
- 1 lb ground beef
- 1 cup chopped mushrooms (white button or cremini)
- 1 small onion, diced
- 1 cup uncooked white rice
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups beef broth
- 1/2 cup sour cream
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional, for topping)
Instructions
Step 1: Cook the Beef & Veggies
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.
- Add the chopped mushrooms and onion. Cook for 4–5 minutes, until softened.
- Season with garlic powder, salt, and pepper.
Step 2: Combine Ingredients
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine the beef mixture with uncooked rice, cream of mushroom soup, beef broth, and sour cream. Stir until well blended.
Step 3: Transfer to Baking Dish
- Pour the mixture into a greased 9×13-inch baking dish. Spread evenly.
- Cover tightly with foil.
Step 4: Bake
- Bake covered for 50–55 minutes, or until the rice is tender and most of the liquid is absorbed.
- Remove foil and sprinkle with cheddar cheese, if using. Return to oven uncovered for 5–10 minutes, until cheese is melted and bubbly.
Step 5: Serve & Enjoy
- Let rest for 5 minutes before serving.
- Garnish with fresh parsley or green onions for a pop of color.
