Ingredients
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups sweetened shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter & sugars – In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy.
- Add eggs & vanilla – Beat in the eggs one at a time, then mix in vanilla extract.
- Mix dry ingredients – In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine & fold in coconut – Slowly add dry mixture to wet mixture until combined. Fold in shredded coconut.
- Scoop & shape – Drop tablespoon-sized scoops of dough onto the lined baking sheet, leaving space between each.
- Bake for 10–12 minutes, until edges are golden but centers are still soft.
- Cool on a wire rack before serving.
Tips & Variations
- Add white chocolate chips for extra sweetness.
- Use toasted coconut for a nuttier flavor.
- Make them chewier by slightly underbaking.
