Coconut Butter Cookies


Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups sweetened shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter & sugars – In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs & vanilla – Beat in the eggs one at a time, then mix in vanilla extract.
  4. Mix dry ingredients – In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Combine & fold in coconut – Slowly add dry mixture to wet mixture until combined. Fold in shredded coconut.
  6. Scoop & shape – Drop tablespoon-sized scoops of dough onto the lined baking sheet, leaving space between each.
  7. Bake for 10–12 minutes, until edges are golden but centers are still soft.
  8. Cool on a wire rack before serving.

Tips & Variations

  • Add white chocolate chips for extra sweetness.
  • Use toasted coconut for a nuttier flavor.
  • Make them chewier by slightly underbaking.
